Merry Thanks

Among all the holidays I have to say Thanksgiving is one of my absolute favorites. To have a holiday that we focus on family, friends and giving thanks for our blessings is the ultimate in my book!  12 years ago my husband and I decided that we wanted to create a holiday tradition that included all our love ones (friends included) and was celebrated on the Tuesday before Thanksgiving.  Since my side of the family, my husbands side of the family and all our friends have separate celebrations on Thanksgiving day, our “Merry Thanks” tradition give us a chance to all celebrate together, in one big, joyous bunch!  I am so thankful for this tradition and for all the friends and family that has shared it with me over the past 12 years! May this Thanksgiving be the Merriest!

This little baby is my families all time favorite so I thought I would share the secret for you and yours. MT_The Dessert




¾ cup all purpose flour

½ tsp. baking powder

½ tsp. baking soda

½ tsp. ground cinnamon

½ tsp. ground cloves

¼ tsp. salt

3 large eggs

1 cup sugar

2/3 cup 100% pumpkin puree

1 cup chopped pecans

powder sugar for dusting


Filling Ingredients:

1 8oz. cream cheese block softened

1 cup sifted powder sugar

6 tbsp. margarine softened

1 tsp. vanilla extract



• pre-heat oven 375 degrees

• line 15” x 10” jelly roll pan with wax paper. Grease and flour wax paper

• Sprinkle non-terrycloth kitchen towel with powder sugar

• Combine first 6 dry ingredients

• Beat eggs & sugar in large bowl until think then beat in pumpkin

• Stir in dry ingredients until combined

• Spread evenly into jelly roll pan

• Sprinkle with nuts

• bake 13-15 minutes until springs back

• once removed from oven immediately flip over onto sugared towel removing from jelly roll pan. Once removed pull off wax paper

• Roll bread in towel lengthwise then allow to cool on wire rack

• combine all filling ingredients and beat until smooth

• unroll cake when completely cooled

• spread filling over entire cake & reroll

• wrap in plastic wrap and refrigerate for at least two hours

• sprinkle with powder sugar and slice to serve



Moscow mules were our summer favorite so this twist on the summer fav was a hit! We like to call it the “Merry Thanks Mule”

Merry Thanks Mule


½ oz simple syrup

½ oz unsweetened cranberry juice

1 ½ oz gin or vodka

2 oz chilled ginger beer

1 rosemary sprig

orange slice, for garnish

cranberries for garnish



Combine simple syrup, cranberry juice, and gin (vodka). Pour over ice and top with ginger beer. Serve garnished with rosemary, orange wedge and cranberries.
